Zucchini
RECOMMENDATION
Zucchini are a great low carb, low glycaemic substitute for pasta when made into strands with a “spiraliser”. It is a hearty veg to add to soups, stews and stir-fries and makes wonderful fritters and can even be used as a neutral tasting filler in cakes!
If you are not eating organic zucchini, be sure to wash them thoroughly before consumption as they do tend to retain some pesticides on the skin surface. You can mix 10% white vinegar and 90 percent warm water and soak for around 10 minutes then rub and rinse.

They also contain significant amounts of carotenoids — such as lutein, zeaxanthin, and beta-carotene which have been shown to have multiple anti-cancer benefits when consumed on a regular basis, particularly in gastric, prostate and breast cancers.
