Green Beans
RECOMMENDATION
Beans are a very nutritious side to any meal which are best served lightly cooked, so they remain crunchy and they retain their nutrients.
If you are not eating organic beans, be sure to wash them well before consumption as they do tend to contain some pesticides on the skin surface. Mix 10% white vinegar and 90 percent warm water and soak for around 10 minutes then rub and rinse.
Why Grean Beans are good for us
CONSUME OFTEN
Green beans contain a high amount of chlorophyll, vitamins A, C and K as well as folic acid and high amounts of fibre. They are low glycaemic, therefore do not invoke an elevation of blood sugar.
New evidence also suggests that an increase in green bean intake can reduce the risk of cancerous adenoma recurrence and colorectal cancer.
