Ingredients
  • 600 grams Pumpkin or Butternut Squash
  • 2 (150g pcs) grams Wild Caught Salmon
  • 3 teaspoons Coconut Oil
  • 3 pinches Himalayan Rock Salt
  • 1 pinch Cracked Black Pepper
  • 2 pinches Fresh Rosemary
  • 2 teaspoons Organic Butter
  • 2 pinches Garlic Powder
  • 1 pinch Ground Black Pepper
Instructions
  1. Cut pumpkin or butternut into small cubes and steam until soft

  2. While the pumpkin is cooking, add three teaspoons of coconut oil to a hot frying pan and add two 150g pieces of salmon skin side down. Season the flesh surfaces with salt and cook on each surface for around two minutes each, until the flesh turns golden. Finish on the skin side again then season flesh with fresh rosemary and cracked pepper and remove

  3. Place cooked pumpkin into a bowl and add a pinch of garlic powder, 2 teaspoons of organic butter, a pinch of salt and ground black pepper and roughly mash

  4. Plate pumpkin, remove and discard skin from salmon and place salmon on top of pumpkin. Add a sprinkling of fresh rosemary and serve
