Ingredients
  • 75 grams Quinoa Cooked
  • 50 grams Spinach
  • 75 grams Swiss Chard
  • 50 grams Red Onion
  • 50 grams Cherry Tomatoes
  • 1 teaspoon Garlic - Minced
  • 1.5 teaspoon Olive Oil
  • 1 Large Egg
  • 1/2 teaspoon Pumpkin Seeds
Instructions
  1. In a pan, heat 1.5 teaspoons of olive oil and sauté minced garlic until aromatic.
  2. Add chopped red onion and cook until translucent.
  3. Stir in spinach and Swiss chard, allowing them to wilt. Season with salt and pepper.
  4. Season cooked quinoa in a bowl with salt and pepper and top with sautéed greens, and poached egg.
  5. Garnish with halved cherry tomatoes and a sprinkle of pumpkin seeds if desired.
