Ingredients
  • 75 grams Quinoa Cooked
  • 75 grams Black Beans
  • 1/2 teaspoon Olive Oil
  • 1/4 teaspoon Ground Cumin
  • 1 dash Paprika
  • 1 Medium Egg
  • 1/4 Medium Avocado
  • 1 Medium Tomato
  • 1/4 Medium Red Onion
  • 15 grams Fresh Coriander
  • 1/4 Medium Lime
  • 1 dash Salt And Pepper To Season
Instructions
  1. In a bowl, mix together the cooked quinoa and black beans. Alternatively you could use lentils. Add ground cumin, paprika, olive oil and season with salt and pepper to taste.
  2. Poach the egg to your liking and place on top of the quinoa/bean mix.
  3. Garnish with sliced avocado, diced tomatoes, red onion, and fresh coriander.
  4. Squeeze lime wedges over the dish to add a zesty kick.
  5. Optionally, drizzle with hot sauce if you prefer some heat.
  6. Serve immediately, allowing the runny yolk to meld with the quinoa and beans.
