Carrots
RECOMMENDATION
Carrots are delicious raw with some homemade hummus, roasted, grated and pickled, great in salads, steamed or lightly boiled.
If you are not eating organic carrots, be sure to peel them before consumption as they do tend to contain some pesticides on the skin surface.
Why Carrots are good for us
CONSUME OFTEN
Carrots contain an antioxidant called beta-carotene which is believed may protect cell membranes from toxin damage and slow the growth of cancer cells.
Various vitamins and phytochemicals which carrots contain, have been found to help guard against cancers such as mouth, oesophagus and stomach cancers.
Some studies suggest that carrots could help reduce the chances of developing cervical cancer because they contain antioxidants which help battle HPV (human papilloma virus), one of the major causes of cervical cancer.
Women with high amounts of carotenoids from regular consumption of carrots or carrot juice, may also have a reduced risk of breast cancer.
In 2011 researchers concluded that regular consumption of carrot juice may help prevent the type of cell damage which leads to lung cancer in smokers.
